So, my dad was in charge of picking out the recipe for tonight's dinner. Guess what that means? He found a pasta box and chose the recipe on the back. Real creative right?! Haha. Just kidding, but it actually was pretty good, I think if we ever make it again we will definitely cut the recip in half! It made sooo much and it said it serves 4..... maybe if that means 4 couples! So, take into consideration if you ever try and make this dish!
Penne Rigate with Chicken (Served Hot)
1 pkg Ronzoni Healthy Harvest penne rigate
2-3 tbsp olive oil
1 each; yellow pepper, onion and garlic clove, chopped (I would add in a green onion too if it were me!)
1 jar (about 26 oz.) spaghetti sauce
3 grilled or cooked boneless, skinless chicken breasts, sliced
1 tbsp chopped fresh parsley or basil
Cook pasta according to package directions. Saute peppers, onion and garlic in oil until tender. Stir in spaghetti sauce, chicken and parsley or basil. Simmer 2-3 minutes. Serve sauce mixture over pasta.
Ta-da! Super easy!
